Not all equipment is the same and there is generally very good reasons why one may be more costly up front than another, so this is why we look at "operational costs"
Where are the savings during operation, maintenance, cleaning and energy consumption? Out of all of the different types of cooking processes and the equipment that you use this question can be asked. Chargrills, combi steamers, deep fryers, speed ovens, wok tables, convection ovens, open burners gas or electric applications all need to be drilled down on to ensure you are getting an appliance that is fit for purpose - your purpose.
